Apple, Kale and Cabbage Salad
Yield: 1 serving
4 tsp raw apple cider vinegar
⅛ tsp sea salt
pinch of black pepper
2 large carrots, peeled and coarsely grated
½ head of red cabbage, finely chopped (about 2 cups)
2 cups finely chopped raw kale
1 large apple, peeled, cored and diced
1 Tbsp lemon juice
In a small bowl, whisk together the apple cider vinegar, salt and pepper. Set aside.
Place the carrots, cabbage, kale and apple in a large bowl.
Mix in the lemon juice.
Pour the vinegar mixture over the top and toss.
