Apple, Kale and Cabbage Salad

Yield: 1 serving


  • 4 tsp raw apple cider vinegar

  • ⅛ tsp sea salt

  • pinch of black pepper

  • 2 large carrots, peeled and coarsely grated

  • ½ head of red cabbage, finely chopped (about 2 cups)

  • 2 cups finely chopped raw kale

  • 1 large apple, peeled, cored and diced

  • 1 Tbsp lemon juice


  1. In a small bowl, whisk together the apple cider vinegar, salt and pepper. Set aside.

  2. Place the carrots, cabbage, kale and apple in a large bowl.

  3. Mix in the lemon juice.

  4. Pour the vinegar mixture over the top and toss.
