Chilled Gazpacho
Yield: 1 -2 servings
Ingredients:
5 medium tomatoes, finely chopped
1 red pepper, finely chopped
1 cucumber, finely chopped
¼ onion, finely chopped
1 avocado, chopped
1 cup water
¾ tsp. sea salt
½ cup cilantro, chopped
½ cup fresh basil, chopped
½ cup lemon juice or lime juice
Instructions:
Combine all ingredients in large bowl and toss.
Pour half of the mixture into a food processor and pulse.
Return the mixture to the bowl with the rest of the soup and mix well.
