Flourless Protein Pancakes

 

Yield: 4-6 pancakes

Ingredients:

  • 1 medium ripe banana

  • 1 serving plant protein powder

  • 2 eggs, or 3 egg whites

  • ¼ tsp. baking powder

  • ¼ tsp. salt

  • 1 dash cinnamon

  • Optional: Berries for topping

Instructions:

  1. In a large bowl, mash the banana with a fork until smooth.

  2. Mix in all other ingredients until well combined. 

  3. Heat a nonstick skillet or griddle lightly coated with oil or cooking spray over medium heat.

  4. Scoop about ¼ cup of batter per pancake onto the griddle. Cook for 2–3 minutes or until the tops are covered with bubbles and the edges look golden brown. Flip pancakes and cook for an additional 1–2 minutes or until pancakes are done.

  5. Serve immediately with your favorite toppings.
