Matcha Bliss Bites
Yield: 30 bites
Ingredients:
½ cup unsweetened shredded coconut, plus 2 Tbsp set aside for rolling
½ cup raw cashew butter (or almond butter)
½ cup coconut flour
¼ cup collagen powder
¼ cup agave (or maple syrup or honey)
1-2 Tbsp. matcha powder
1 Tbsp. greens powder
1 Tbsp. chia seeds (or hemp seeds)
¼ tsp. sea salt
Instructions:
Add all ingredients to a mixer or food processor and mix until a thick doughy texture forms. Scrape down sides as needed.
Scoop out 1 Tbsp. amounts and gently roll into balls.
Roll each ball in the 2 Tbsp. shredded coconut until evenly coated.
Freeze or refrigerate for 10-15 minutes, or until firm.
Store in the freezer, or refrigerator for up to 1 week.
