Mason Jar Salad
Ingredients:
Dressing of choice
Choice of crisp vegetables/fruits
Examples: tomatoes, cucumbers, red onion, asparagus, celery, peppers, carrots, apples, pears, etc.
Choice of Grains and Proteins
Examples: brown or wild rice, quinoa, hard-boiled eggs, edamame, chickpeas, kidney beans, lentils, peas, chicken, etc.
Soft veggies/fruits
Examples: mushrooms, zucchini, corn, broccoli, roasted beets, avocado, blueberries, orange slices, etc.
Cheese and/or nuts/seeds
Examples: feta, goat, gouda, cheddar, walnuts, slivered almonds, toasted pine nuts, hemp seeds, sunflower seeds, etc.
Leafy greens
Examples: spinach, kale, arugula, etc.
Directions:
At the bottom, add 1-2 tablespoons of dressing.
Add the crisp veggies and fruits.
Add grains and protein.
Add soft veggies, fruits, roasted nuts or seeds.
Top this layer with cheese, if using.
Add salad greens. Add as much as you can squeeze into the jar!
Store in refrigerator and consume within 3-5 days.
