No-Bake Energy Bites

 

Yield: 3-4 servings

Ingredients:

  • 1 ½ cups old fashioned oats

  • 2 scoops plant protein powder

  • 3 Tbsp. flax seeds, hemp seeds, or chia seeds

  • 3 Tbsp. raw honey or maple syrup

  • ½ cup nut butter of choice, no sugar added

  • ¼ cup dried cranberries or dark chocolate chips

  • ¼ cup water, as needed

Directions:

  1. Place oats, protein powder, and seeds in a food processor or blender. Pulse to combine.

  2. Add honey, nut butter, and cranberries and pulse to combine.

  3. Add half the water slowly while mixing on medium-low until mixture holds together. Add more water if needed.

  4. Mold dough into 2” diameter balls and place in an airtight container in the refrigerator until firm and chilled, about 1 hour.
