No-Bake Energy Bites
Yield: 3-4 servings
Ingredients:
1 ½ cups old fashioned oats
2 scoops plant protein powder
3 Tbsp. flax seeds, hemp seeds, or chia seeds
3 Tbsp. raw honey or maple syrup
½ cup nut butter of choice, no sugar added
¼ cup dried cranberries or dark chocolate chips
¼ cup water, as needed
Directions:
Place oats, protein powder, and seeds in a food processor or blender. Pulse to combine.
Add honey, nut butter, and cranberries and pulse to combine.
Add half the water slowly while mixing on medium-low until mixture holds together. Add more water if needed.
Mold dough into 2” diameter balls and place in an airtight container in the refrigerator until firm and chilled, about 1 hour.
