No-Bake Energy Bites

 

Yield: 3-4 servings

Ingredients:

  • 1 ½ cups old fashioned oats

  • 2 scoops plant protein powder

  • ¼ cup coconut flakes, unsweetened

  • 3 Tbsp. flax seeds, hemp seeds, or chia seeds

  • 1 tsp. vanilla extract

  • ½ cup nut butter of choice, no sugar added

  • ¼ cup dried cranberries or dark chocolate chips

  • ½ cup water

Directions:

  1. Place oats, protein powder, coconut, seeds, and vanilla in a food processor or blender. Pulse to combine.

  2. Add nut butter and cranberries or chocolate chips and pulse to combine.

  3. Add water slowly and blend on medium-low until mixtures holds together. Mold dough into 2” diameter balls.

  4. Place in an airtight container in the refrigerator until firm and chilled, about 1 hour.
