Carrot Cake Smoothie Bowl
Yield: 1 serving
Ingredients:
4 large carrots, peeled and chopped
1 banana, frozen
½ cup pineapple, frozen
½ zucchini, peeled and chopped
4 Tbsp. full fat coconut milk
¼ avocado
1 serving plant protein powder
¼ tsp. cinnamon
¼ tsp. ground ginger
¼ tsp. vanilla extract
1 pinch sea salt
Directions:
Blend all ingredients together in a high-speed blender or a food processor. If needed, add more coconut milk but not too much so it stays thick.
When creamy, pour it into a bowl and add your favorite toppings.
