Carrot Cake Smoothie Bowl

 

Yield: 1 serving

Ingredients:

  • 4 large carrots, peeled and chopped

  • 1 banana, frozen

  • ½ cup pineapple, frozen

  • ½ zucchini, peeled and chopped

  • 4 Tbsp. full fat coconut milk

  • ¼ avocado

  • 1 serving plant protein powder

  • ¼ tsp. cinnamon

  • ¼ tsp. ground ginger

  • ¼ tsp. vanilla extract

  • 1 pinch sea salt

Directions:

  1. Blend all ingredients together in a high-speed blender or a food processor. If needed, add more coconut milk but not too much so it stays thick.

  2. When creamy, pour it into a bowl and add your favorite toppings.
