Matcha Superfood Pudding
Yield: 3-4 servings
Ingredients:
1 can full-fat coconut milk
½ cup coconut milk or almond milk, unsweetened
2 scoops collagen powder
2 Tbsp. agave nectar or pure maple syrup
1 Tbsp. matcha powder
1 pinch sea salt
¼ cup chia seeds
Optional toppings: fresh berries, goji berries, cacao nibs, shredded coconut, slivered almonds, etc.
Directions:
Add all ingredients except chia seeds and optional toppings to a blender or food processor and mix until smooth.
Stir the chia seeds into the mixture. Stir thoroughly.
Pour evenly into a jar, seal tightly, and refrigerate overnight.
Garnish with desired toppings and enjoy.
