Matcha-Chia Superfood Pudding

Matcha Chia Pudding

Yield: 3-4 servings


  • 1 can full-fat coconut milk

  • ½ cup coconut milk or almond milk, unsweetened

  • 2 Tbsp. agave nectar or pure maple syrup

  • 1 tsp. matcha powder

  • 1 tsp. vanilla extract

  • 1 pinch sea salt

  • ¼ cup chia seeds

  • Optional toppings: fresh berries, goji berries, cacao nibs, shredded coconut, slivered almonds, etc.


  1. Add the first 6 ingredients to a blender or food processor and mix until smooth.

  2. Stir the chia seeds into the mixture. Stir thoroughly.

  3. Pour evenly into a jar, seal tightly, and refrigerate overnight.

  4. Garnish with desired toppings and enjoy.
