Matcha Superfood Pudding

 
Matcha Chia Pudding

Yield: 3-4 servings

Ingredients:

  • 1 can full-fat coconut milk

  • ½ cup coconut milk or almond milk, unsweetened

  • 2 scoops collagen powder

  • 2 Tbsp. agave nectar or pure maple syrup

  • 1 Tbsp. matcha powder

  • 1 pinch sea salt

  • ¼ cup chia seeds

  • Optional toppings: fresh berries, goji berries, cacao nibs, shredded coconut, slivered almonds, etc.

Directions:

  1. Add all ingredients except chia seeds and optional toppings to a blender or food processor and mix until smooth.

  2. Stir the chia seeds into the mixture. Stir thoroughly.

  3. Pour evenly into a jar, seal tightly, and refrigerate overnight.

  4. Garnish with desired toppings and enjoy.
