Blueberry Granola Smoothie Bowl

 

Yield: 1 serving

Ingredients:

  • 1 cup frozen blueberries

  • ½ cup frozen cauliflower

  • ¾ cup milk of choice

  • 1 serving plant protein powder or collagen

  • 1 ½ Tbsp. sunflower seed butter

  • ¼ cup granola

  • 1 Tbsp. unsweetened shredded coconut

Directions:

  1. Add the blueberries, cauliflower, milk, protein, and sunflower seed butter and blend until smooth (scraping down the sides of the blender with a spatula or adding another splash of milk if needed as the smoothie should be thick).

  2. Transfer the smoothie to a bowl and top with the granola and coconut. Enjoy!
