Blueberry Granola Smoothie Bowl
Yield: 1 serving
Ingredients:
1 cup frozen blueberries
½ cup frozen cauliflower
¾ cup milk of choice
1 serving plant protein powder or collagen
1 ½ Tbsp. sunflower seed butter
¼ cup granola
1 Tbsp. unsweetened shredded coconut
Directions:
Add the blueberries, cauliflower, milk, protein, and sunflower seed butter and blend until smooth (scraping down the sides of the blender with a spatula or adding another splash of milk if needed as the smoothie should be thick).
Transfer the smoothie to a bowl and top with the granola and coconut. Enjoy!
