Mint Chocolate Bliss Bites
Yield: 14 servings
Ingredients:
1 cup raw cashews
10 pitted Medjool Dates
¼ cup cacao powder
2 Tbsp. ground flaxseeds
1 tsp. peppermint extract
1 pinch of sea salt
Optional: ¼ cup dark chocolate chips, melted
Instructions:
Add all of the ingredients to a food processor, and process on high until the mixture starts to stick together.
Using a spoon or cookie scoop, scoop a ball and roll it in between your hands. Then place it on a plate. Continue this process until you've used up all the dough.
Optional: Dip each ball in melted chocolate and place on parchment paper. Sprinkle with chopped nuts or coconut. Store in refrigerator until coating has firmed.
