Mint Chocolate Bliss Bites

 

Yield: 14 servings

Ingredients:

  • 1 cup raw cashews

  • 10 pitted Medjool Dates

  • ¼ cup cacao powder

  • 2 Tbsp. ground flaxseeds

  • 1 tsp. peppermint extract

  • 1 pinch of sea salt

  • Optional: ¼ cup dark chocolate chips, melted

Instructions:

  1. Add all of the ingredients to a food processor, and process on high until the mixture starts to stick together.

  2. Using a spoon or cookie scoop, scoop a ball and roll it in between your hands. Then place it on a plate. Continue this process until you've used up all the dough.

  3. Optional: Dip each ball in melted chocolate and place on parchment paper. Sprinkle with chopped nuts or coconut. Store in refrigerator until coating has firmed.
