Cauliflower Tabbouleh

 
Cauliflower Tabbouleh

Yield: 1 serving

Ingredients:  

  • 1 head of cauliflower, riced (or 1 bag of riced cauliflower)

  • 3 large bunches parsley, finely chopped

  • 2 cups tomatoes (about 8 large tomatoes), finely diced

  • 1 bunch green onions, finely chopped

  • 1 English cucumber, peeled and finely diced

  • 1 avocado, diced

  • 3 Tbsp. lemon juice

  • 2 Tbsp. finely chopped mint

  • ½ tsp. sea salt

  • ¼ tsp. ground black pepper

Instructions: 

  1. Add cauliflower rice to a large mixing bowl.

  2. Add all of the other ingredients and toss until well combined.

  3. Add more lemon juice, mint, salt, and pepper if desired, to taste.
