Cauliflower Tabbouleh
Yield: 1 serving
Ingredients:
1 head of cauliflower, riced (or 1 bag of riced cauliflower)
3 large bunches parsley, finely chopped
2 cups tomatoes (about 8 large tomatoes), finely diced
1 bunch green onions, finely chopped
1 English cucumber, peeled and finely diced
1 avocado, diced
3 Tbsp. lemon juice
2 Tbsp. finely chopped mint
½ tsp. sea salt
¼ tsp. ground black pepper
Instructions:
Add cauliflower rice to a large mixing bowl.
Add all of the other ingredients and toss until well combined.
Add more lemon juice, mint, salt, and pepper if desired, to taste.
