High Protein Oatmeal Squares

Yield: 6 servings

Ingredients:

  • 3 cups rolled oats

  • 2 eggs

  • ¾ cup natural peanut butter, unsweetened

  • 4 scoops plant protein powder

  • ¼ cup honey, maple syrup, or agave nectar

  • Optional: ½ cup dark chocolate chips

Instructions:

  1. Preheat oven to 300 degrees F.

  2. Line a 8x8 baking dish with parchment paper.

  3. Combine all ingredients in a bowl to mix by hand, or in an electric mixer.

  4. Empty mixture into lined baking dish and smooth it out evenly.

  5. Bake for 15 minutes.

  6. Allow to cool and cut into bars.
