Chilled Red Pepper Curry Soup
Yield: 1 serving
Ingredients:
1 ½ large red or yellow bell peppers
1 apple, peeled and chopped
1 small avocado
½ cup basil leaves
1 green onion, chopped
1 clove garlic, minced
1 Tbsp. curry powder, or to taste
Sea salt, to taste
Dash cayenne
2 cups water, or until desired consistency is reached
Directions:
Blend all ingredients in a high-speed blender until smooth.
Chill in refrigerator for 2-3 hours.
Serve chilled in a bowl or mug.
